Yield: Serves 6 to 8

  • 1 tablespoon olive oil
  • 12 ounces andouille sausage, sliced
  • 1 medium onion, chopped
  • 2 ribs celery, chopped
  • 1 bell pepper, chopped, red, green, or other color
  • 2 cans (14.5 ounces each) diced tomatoes
  • 1 1/2 teaspoons Cajun seasoning blend

  • 2 cans (about 15 ounces each) pinto beans, drained and rinsed
  • 2 green onions, thinly sliced
  • 1/4 cup chopped fresh parsley or cilantro

Bring to a boil; reduce heat, cover, and simmer for 15 minutes. Add the green onions and parsley and continue cooking for 2 minutes longer.
