Ingredients:
- 1 pound lentils, rinsed and drained
- 1 cup diced celery
- 1 cup diced onion
- 1 cup diced carrot
- 2 cloves garlic, coarsely chopped
- 12 ounces smoked sausage, chicken, andouille, turkey sausage, or other
- 6 cups chicken broth
- 2 cans (14.5 ounces each) diced tomatoes, undrained
- 2 cups chopped fresh spinach or chard
- Juice of 1 lemon, about 2 tablespoons
- 1/4 teaspoon ground black pepper
- 1 tablespoon chopped fresh parsley
- Salt, to taste
Preparation:
If desired, blend 3 to 4 cups of this, about 1 cup at a time, to make a thicker soup. Or, use an immersion blender and blend until you reach the consistency you desire.
Serves 8 to 10.
