All Day Crockpot Delight

Ingredients:

  • 2 to 3 pounds stew beef or lean chuck, cut in cubes
  • 1/2 cup flour
  • 1/4 cup butter
  • 1 medium onion, sliced
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1 clove garlic, minced
  • 12 ounces beer
  • 1/4 cup flour

Preparation:

Coat beef cubes with the 1/2 cup flour. Brown in skillet in the butter. Drain off excess fat. In slow cooker, combine browned meat with onion, salt, pepper, garlic and beer. Cover and cook on low 6 to 9 hours, or until meat is tender. Turn control to high. Dissolve remaining 1/4 cup flour in small amount of cold water. Stir into meat mixture, cook on high 30-40 minutes longer.
Serve with rice and salad.

One of My Most Cooked Recipes, Member psychicphilosopher

I've been cooking this for several years now. It's one of my all-time favorites, and I cook it at least once a month. I've recently started altering it a bit. Instead of using the salt and pepper as called for, I use Cavendar's Greek Seasoning. I mix it with the flour (maybe 1 tsp.), and then I sprinkle it on the meat before I dip it in flour. I also use a red onion and caramelize the onion in the same skillet I used to brown the meat before adding it to the crockpot. I use the garlic as directed. Additionally, because of the cooking time and the fact I'm usually gone for at least 10 hours, I've started getting a boneless chuck roast instead of the stew meat. I cut it in 1-inch chunks. That way, the meat doesn't just fall apart when I finally get home to turn off the crockpot. It's still tender, but there's some substance to it. Finally, I use Corona for the beer. But I'm not sure that makes a difference. The Greek seasoning, though, has really enhanced this recipe.
