Ingredients:
- 2 pounds stewing beef, cut in 1/2-inch to 1-inch pieces
- 1/4 cup flour
- 1/2 teaspoon ground black pepper
- 1 teaspoon salt
- 1 bag (16 ounces) frozen pearl onions
- 6 to 8 ounces chopped or sliced mushrooms
- 2 cloves garlic, thinly sliced or minced
- 1/4 teaspoon dried leaf thyme
- 1 cup beer or ale
- 1/2 cup broth or water
- 2 tablespoons flour
- 1 tablespoon cold water
Preparation:
Combine beef with onions, mushrooms, garlic, thyme, beer, and 1/2 cup of broth or water in the slow cooker. Cover and cook on LOW for 8 to 9 hours. Remove beef and pour juices into a medium saucepan. Simmer over medium heat for 3 to 5 minutes to reduce slightly. Combine remaining 1 tablespoon flour with 1 to 2 tablespoons of water until smooth. Stir flour mixture into the juices and add the beef; heat through. Serve with mashed potatoes, buttered noodles, or rice.
