Simple Leftover Beef Casserole with Cheese


This casserole is a great way to enjoy leftover roast beef. It's simply a mixture of cooked roast beef, gravy, and vegetables topped with cheese,


  • 2 cups diced cooked beef
  • 1 can beef gravy or 1 cup of gravy made from dry mix
  • 1 jar (about 16 ounces) small white onions, drained
  • 1 package (10 ounces) frozen peas and carrots, cooked
  • 1/2 cup shredded sharp cheddar cheese


Combine meat with gravy, onions, peas and carrots.

Transfer to a buttered 1 1/2 to 2-quart casserole and top with shredded Cheddar cheese. Bake at 350° for 35 minutes.
