This old recipe includes cooked meat, onions, curry powder, almonds, and coconut.
Ingredients:
- 2 cups diced leftover beef, pork, or lamb
- 1 cup chopped onions
- 2 tablespoons cooking oil
- 1 large slice of bread
- 1 cup milk
- 2 large eggs
- 2 tablespoons curry powder, or to taste
- 1/2 teaspoon sugar
- 2 tablespoons vinegar
- Condiments: almonds, coconut, chutney, raisins, etc.
Preparation:
Soak bread in milk then squeeze dry, reserving milk. Fry chopped onion in a large skillet in the oil until brown; sprinkle in curry powder and cook for a few
minutes, taking care not to burn. Mix all ingredients with the diced meat
and soaked bread, adding 1 egg. Whisk other egg with the reserved milk. Put
meat curry mixture into a greased 1 1/2-quart casserole and pour milk and egg mixture evenly over the mixture. Bake at 350° for 30 minutes, or until set; serve with hot cooked rice and condiments, if desired.
