Ingredients:

1 large onion, quartered and sliced
1/4 cup shortening
1 pound round steak, cut in bite-size cubes
1/4 cup flour
2 teaspoons salt
1/8 teaspoon pepper
1/2 teaspoon paprika
1/8 teaspoon allspice
dash ground ginger
2 1/2 cups beef broth
2 cups diced potatoes
1/2 cup diced carrot

Pie Pastry
1 cup flour
1/2 teaspoon salt
1/3 cup shortening, cold
1 egg, slightly beaten

Preparation:

Heat shortening in a large skillet; add onions and fry until just yellow in color. Remove onions.

In a food storage bag or bowl, combine flour with salt, pepper, and spices. Toss beef cubes with flour mixture. Put beef in the skillet with any remaining flour mixture and cook until browned. Pour off any excess fat, if necessary. Add beef broth and bring to a boil. Cover skillet and simmer for about 1 hour, or until beef is tender. Add potatoes and carrots and simmer 10 to 12 minutes longer, until potatoes are tender. Add onions back to meat mixture. Transfer meat mixture to a greased 8-inch baking dish or casserole.

Make pastry. Combine 1 cup flour and 1/2 teaspoon salt. Add about half of the 1/3 cup shortening, about 3 tablespoons, cutting in until mixture resembles meal. Add remaining shortening, cutting in until the particles are about the size of peas. Add the beaten egg and mix in thoroughly with a fork.

Roll pastry out to 1/4-inch thick to fit baking dish or casserole. Fit pastry over top and seal around the edge. Cut vents in top of pastry so steam can escape. Bake at 425° for 30 to 40 minutes, until browned.
Serves 4.
