Spiced Beef Short Ribs with Prunes


  Prunes, dried apricots, and a variety of spices flavor these tasty long simmered beef short ribs.


  • 3 pounds beef short ribs
  • salt and freshly ground black pepper
  • 3/4 cup flour
  • 2 tablespoons vegetable oil
  • 1 cup water
  • 1/2 cup pitted prunes
  • 1/2 cup dried apricots
  • 2 tablespoons sugar
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • 3 tablespoons vinegar


Season meat with salt and pepper then dredge in flour to coat all sides. Brown on all sides in hot oil in a deep, heavy skillet or Dutch oven. Remove meat and pour off excess fat. Put meat back in the pot. Add water and bring to a boil. Reduce heat, cover, and simmer for 1 1/2 hours.

Add dried fruits and remaining ingredients. Simmer, adding more water if necessary, for 1 hour longer.

Serves 4.
