Vegetable Beef Barley Soup

Yield: Serves 4


  • 1 tablespoon Canola oil
  • 2 cloves garlic, minced
  • 1/2 cup chopped onion
  • 2 ribs celery, chopped
  • 2 medium carrots, chopped
  • 8 ounces sliced mushrooms, about 2 - 2 1/2 cups
  • 4 cups beef broth
  • 1/4 cup barley
  • 4 ounces stew beef, diced


In a large Dutch oven or saucepan, heat oil; sauté garlic, onion, celery, carrots and mushrooms for about 8 to 10 minutes, or until tender.

Add beef broth, barley, and beef; cover, reduce heat and simmer for 45 to 55 minutes, or until barley is tender, stirring occasionally.

Serves 4.

Good Soup Base, But Quite Bland, Member alyssap79

This is a wonderful soup base for vegetable beef barley. However, to follow the recipe to a T, it is quite bland as it calls for no seasoning. I tried adding a bit of salt and pepper first. However, for my liking, it was still too bland. I ended up adding ground mustard, garlic and onion powder, and celery salt to taste. I let it simmer with a bay leaf. My family liked it much better after we doctored it up.
