Vegetable Beef Barley Soup

Prep Time: 10 minutes

Cook Time: 1 hour

Ingredients:

  • 1 tablespoon Canola oil
  • 2 cloves garlic, minced
  • 1/2 cup chopped onion
  • 2 ribs celery, chopped
  • 2 medium carrots, chopped
  • 8 ounces sliced mushrooms, about 2 - 2 1/2 cups
  • 4 cups beef broth
  • 1/4 cup barley
  • 4 ounces stew beef, diced

Preparation:

In a large Dutch oven or saucepan, heat oil; sauté garlic, onion, celery, carrots and mushrooms for about 8 to 10 minutes, or until tender. Add beef broth, barley, and beef; cover, reduce heat and simmer barley soup for 45 to 55 minutes, or until barley is tender, stirring occasionally.
Beef barley soup with vegetables serves 4.

"I made a double batch of this wonderful soup and added two 16 oz. jars of my own canned tomatoes mushed up slightly in the pot. I used Swanson's Beef Broth, but used one container of the full-sodium and one container of the low-sodium. My family loves it."
