Barbecued Beef for Sandwiches

Serve barbecued beef over rice or hamburger buns.

Ingredients:

  • 1 pound beef, cut into small (1/4 to 1/2-inch) cubes
  • 1 to 2 tablespoons cooking oil
  • 1 cup water
  • 1/2 cup chopped onion
  • 1/2 cup chopped celery
  • 1/2 cup chopped green bell pepper
  • 1 cup ketchup
  • 1/4 cup brown sugar
  • 2 tablespoons vinegar
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • rice or hamburger buns

Preparation:

Brown beef in a heavy skillet in hot oil; add water. Cover tightly and simmer for 1 1/2 hours, or until tender, Check and add more water if necessary. Reserve broth; add enough water to make 2/3 cup. Remove beef and break up into smaller pieces; set aside. In the same skillet, heat a little more oil and cook onion, celery, and green pepper until tender. Add beef, broth, ketchup, brown sugar, vinegar, Worcestershire sauce, salt, and chili powder. Simmer uncovered for 20 to 25 minutes. Serve with rice or over toasted split buns.
Recipe for barbecued beef serves 6 to 8.
