Easy Beef Stroganoff with Ground Beef

Ingredients:

• 2 tablespoons butter
• 1/4 cup sliced green onion
• 1 clove garlic, minced
• 8 ounces sliced fresh mushrooms
• 1 pound ground chuck
• 3 tablespoons lemon juice
• 3 tablespoons red wine
• 1 can (10 1/2 ounces) condensed consommé
• 1 teaspoon salt
• 1/4 teaspoon pepper
• 4 ounces medium egg noodles
• 1 cup sour cream
• chopped parsley

Preparation:

Heat butter in skillet over medium-low heat. Add green onion, garlic, and mushrooms; sauté until tender. Add ground chuck; cook, stirring, until no longer pink. Stir in lemon juice, red wine, consommé, salt, and pepper. Simmer, uncovered, 15 minutes. Stir in the uncooked noodles. Cover and cook 5 to 10 minutes, or until noodles are tender. Mix in the sour cream/ heat through, but do not boil. Sprinkle with parsley and serve immediately.
Ground Beef Stroganoff serves 6.
