Delicious, nutrient-rich beets are cooked in a tangy sauce in this version of the classic, Harvard beets. Make these with fresh cooked beets or use canned drained beets.

Prep Time: 5 minutes

Cook Time: 25 minutes

Total Time: 30 minutes

Yield: Serves 6

Ingredients:

  • 2/3 cup granulated sugar
  • 3 teaspoons cornstarch
  • 1/3 cup cider vinegar
  • 1/3 cup water
  • 4 cups cooked sliced beets
  • 1/4 teaspoon salt
  • 1/8 teaspoon ground black pepper
  • 2 to 3 tablespoons butter

Preparation:

Combine sugar and cornstarch in a saucepan. Whisk in the vinegar and water and cook over medium heat, stirring, until thickened. Add the sliced beets and salt and pepper. Reduce heat to low and cook, stirring frequently, for 20 to 25 minutes.

Stir in the butter and serve hot.

Serves 6.
