Ingredients:
- 1 unbaked pie shell, 9-inch
- 1 3/4 cups sugar, divided
- 6 tablespoons flour
- 1/2 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/3 cup water
- 4 cups gooseberries, washed and stemmed
- 2 egg whites
Preparation:
Bake at 425° for 25 minutes, or until berries are tender. Reduce oven temperature to 350°.
Beat egg whites until foamy in small bowl; beat in saved 1/4 cup sugar, a tablespoon at a time, until stiff peaks form. Spoon meringue around edge of pie. Bake for 10 minutes longer, until meringue peaks are nicely browned. Cool gooseberry pie completely on a rack before cutting.
