Gooseberry Pie

Ingredients:

  • 1 unbaked pie shell, 9-inch
  • 1 3/4 cups sugar, divided
  • 6 tablespoons flour
  • 1/2 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/3 cup water
  • 4 cups gooseberries, washed and stemmed
  • 2 egg whites

Preparation:

Combine 1 1/2 cups sugar, flour, cinnamon, and nutmeg in a medium saucepan; stir in water. Cook over medium heat, stirring constantly, until mixture thickens and boils for 1 minute. Stir in gooseberries and bring to a boil. Reduce heat and simmer for 5 minutes. Pour into prepared pie shell.

Bake at 425° for 25 minutes, or until berries are tender. Reduce oven temperature to 350°.

Beat egg whites until foamy in small bowl; beat in saved 1/4 cup sugar, a tablespoon at a time, until stiff peaks form. Spoon meringue around edge of pie. Bake for 10 minutes longer, until meringue peaks are nicely browned. Cool gooseberry pie completely on a rack before cutting.
