Basic Dumplings

Dumplings on Chicken Stew

These basic dumplings are wonderful in a chicken or beef stew or casserole. Add parsley or chives to the mixture if you like.

  • 2 cups flour
  • 4 teaspoons baking powder
  • 1/2 teaspoons salt
  • 1 cup milk or water

Sift flour, baking powder, and salt together; add liquid and mix to make a batter that can be dropped from a spoon. Drop onto boiling stew, being careful there is plenty of liquid. Cover and cook for 10 to 15 minutes, depending on size of dumplings.

Fithery Dumplings, Member Lise2Hedstrom

I made a half recipe of the dumplings, adding a shake of nutmeg, and put them on a half-kettle of chicken soup. They came out, as my great-grandmother (1861-1962) would have said, ""Light as a fither."" She was Irish-American and a cook for the big houses in LaCrosse and on Summit Hill in St. Paul.
