Black-Eyed Peas Salad

A black-eyed pea salad recipe, made with cooked black-eyed peas, salad dressing mix, green onions, and tomatoes.

Ingredients:

  • 1 package (10 ounces) frozen black-eyed peas
  • 1 package dry garlic salad dressing mix, about 3/4 ounce
  • 1/4 cup cider vinegar
  • 2/3 cup salad oil
  • 1 teaspoon granulated sugar
  • 1/4 teaspoon salt
  • 1/4 teaspoon ground black pepper
  • 1 to 2 tablespoons thinly sliced green onion
  • tomato wedges, for garnish, if desired

Preparation:

Cook black-eyed peas according to package directions, without added bacon or other fat. Drain peas and transfer to a small bowl.

Prepare salad dressing mix using 1/4 cup vinegar and 2/3 cup salad oil, and the amount of water specified on label. Whisk or blend well. Add 2/3 cup of the dressing to the peas, along with sugar and salt (store remaining salad dressing in refrigerator for other uses). Mix pea mixture well. Cover bowl and refrigerate overnight.
To serve, transfer pea mixture to a small serving bowl. Toss with the pepper and sliced green onions.
If desired, garnish with tomato wedges.
Serves 4.
