Blueberry Snack Cake

Serve blueberry bars warm for dessert with a big dollop of whipped cream or a scoop of vanilla ice cream. Or, serve as a coffee cake with coffee or milk and a generous sprinkling of powdered sugar.

Ingredients:

  • 2 cups all-purpose flour
  • 2 teaspoons baking soda
  • 1 cup granulated sugar
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground allspice
  • 1/4 teaspoon ground nutmeg
  • 1 large egg
  • 3/4 cup milk
  • 5 tablespoons melted butter
  • 1 cup fresh blueberries or thawed and well drained frozen blueberries
  • confectioners' sugar for dusting, optional

Preparation:

Heat oven to 350°. Grease and flour an 11 x 7-inch baking pan.

In a mixing bowl, combine the flour, baking soda, sugar, salt, allspice, nutmeg, and cloves.

In another bowl, whisk together the egg, milk, and melted butter. Stir the milk mixture into the dry ingredients just until moistened. Gently fold in the blueberries.

Spread in the prepared baking dish and bake for 25 to 30 minutes, or until the bars are lightly browned and a toothpick comes out clean when inserted in the center.

Serves 12.
