Ingredients:
- 2 boxes (12 ounces each) vanilla wafers
- 2 packages (6 ounces each) sliced almonds
- 1/2 cup unsweetened cocoa powder
- 1 bag (12 ounces) mini semisweet chocolate chips
- 1 package (14 ounces) coconut flakes
- 1/2 cup powdered sugar
- 3 food storage bags (1 gallon size)
- 1 cup light Karo corn syrup
- 1 1/2 cups Captain Morgan's Spiced rum (do not use 151, too strong)
- 1 cup powdered sugar, for rolling the finished balls
Preparation:
2. Do same with almonds.
3. Put in large mixing bowl.
4. Add 1/2 cup powdered sugar, 1/2 cup cocoa, 1 package coconut, and 1 bag mini chocolate chips.
5. Mix, then add the rum and Karo syrup. (Works best to knead with hands)
6. Refrigerate for a couple of hours.
7. Roll into balls about 1 inch in diameter, then roll in powdered sugar.
8. Refrigerate overnight to let flavor' s mingle.
Makes about 120 balls.
