Bread Machine Herb and Parmesan Bread

This fragrant herb and Parmesan loaf is the perfect bread to bake to go with lasagna, spaghetti, or soup. I used fresh oregano, chives, a little basil, and rosemary. If you must use dried herbs, use about 1 tablespoon of dried leaf herbs.

Yield: 1 large (2-pound) Loaf

Ingredients:

  • 1 1/3 cups lukewarm water
  • 2 tablespoons olive oil
  • 2 cloves crushed garlic
  • 3 tablespoons chopped fresh herbs, such as a combination of basil, chives, oregano, and rosemary
  • 4 cups bread flour
  • 1 scant teaspoon salt
  • 1 tablespoon sugar
  • 4 tablespoons grated Parmesan cheese
  • 2 1/4 teaspoons active dry yeast

Preparation:

Add all ingredients to your bread machine in the order recommended by the manufacturer.

Bake on the basic cycle, medium crust.

Makes one 2-pound loaf.

I made a big pot of homemade spaghetti sauce covered over spaghetti and served with homemade meatballs for dinner tonight. This bread was a big hit with my guests and I will definitely make it again, perhaps next time with a bit more garlic.
