Dark Pumperknickel Bread

This is a breadmachine recipe for a dark pumperknickel. My family thinks it tastes just like Steak & Ale's brown bread. We also think it works great for tuna salad sandwiches. Hope you enjoy.

Ingredients:

  • 1 1/3 cups strong coffee
  • 1/4 cup vegetable oil
  • 1/4 cup molasses
  • 1 cup whole wheat flour
  • 1 cup rye flour
  • 2 cup bread flour
  • 2 1/2 teaspoons caraway seeds
  • 2 tablespoons unsweetened cocoa
  • 1 1/2 tablespoons brown sugar
  • 1 1/3 teaspoons salt
  • 2 1/2 teaspoons yeast

Preparation:

Fill bread machine and bake according to bread machine manufacturer's directions.

Great pumpernickel bread that's not a door stop, Member figure2

Excellent recipe. My previous attempts at pumpernickel were half the size they should have been and needed a saw to cut slices. This method makes a nice moist bread with great flavor. My only tweak was to add a half-teaspoon more yeast. I have also been experimenting with all-purpose flour and add a tablespoon of wheat gluten for every cup of flour (2 cups all-purpose flour, 1 cup rye flour, 1 cup whole wheat flour = 4 tablespoons wheat gluten).
