Use fresh or frozen blueberries in this great bread pudding.

Cook Time: 40 minutes

Ingredients:

  • 4 cups bread cubes
  • 1/4 cup butter or margarine, cut in pieces
  • 2/3 cup granulated sugar
  • 1/4 teaspoon salt
  • 2 cups fresh or frozen blueberries, rinsed well and drained
  • 1/4 cup water
  • 2 tablespoons fresh lemon juice
  • cream

"I was making a southern fried chicken dish and was searching online for a dessert to match the southern cuisine. The search engine happened upon About.com's Southern cooking section, pulling up Blueberry Bread Pudding. This recipe is so easy a fool could make it, and it is absolutely scrumptous! Bread pudding haters will change their minds and blueberry haters will fall madly in love with the delectable purple blooded berry. I add an extra measure of sweetness by coating my blueberries in powdered sugar before adding them to the mix. Try it! You'll love it forever!"
