Simple Blueberry Bread Pudding

This delicious blueberry bread pudding recipe may be made with fresh or frozen blueberries. A little fresh lemon juice flavors the pudding, and it is wonderful with plain cream or a dessert sauce, such as a caramel sauce, creamy vanilla sauce, or maple cream sauce.

  • 4 cups bread cubes
  • 1/4 cup butter or margarine, cut in pieces
  • 2/3 cup granulated sugar
  • 1/4 teaspoon salt
  • 2 cups fresh or frozen blueberries, rinsed well and drained
  • 1/4 cup water
  • 2 tablespoons fresh lemon juice
  • cream


In a mixing bowl, combine bread, butter, sugar, salt, blueberries, water, and lemon juice. Pack mixture into a generously buttered 1 1/2-quart baking dish. Cook blueberry bread pudding at 350° for 40 minutes, until set.

Serve this blueberry bread pudding hot or cold with cream or a bourbon sauce.

I was making a southern fried chicken dish and was searching online for a dessert to match the southern cuisine. The search engine happened upon About.com's Southern cooking section, pulling up Blueberry Bread Pudding. This recipe is so easy a fool could make it, and it is absolutely scrumptous! Bread pudding haters will change their minds and blueberry haters will fall madly in love with the delectable purple blooded berry. I add an extra measure of sweetness by coating my blueberries in powdered sugar before adding them to the mix. Try it! You'll love it forever!
