Sausage and Egg Casserole a big hit for ChristmasDecember 25, 2008By jw6573
"I served this casserole at Christmas brunch and it was a big hit. My husband wants me to make it more than once a year! I increased the cheese to 2 cups, added two eggs and substituted Half 'n Half for the milk. This increases calories and fat so I would only make it this way for special days. If I make it again, I will use 1% or 2% milk. I used a country sausage from a local farm which we purchased through our Hen House CSA this summer and put away in the freezer. Great recipe. I would like to try it with some variations and may try it next time with Swiss cheese instead of cheddar. I think it will be more quiche-like."
