This easy casserole is a great recipe to make ahead the night before your special family breakfast or brunch. You need 15 minutes of preparation and 45 minutes in the oven to serve this delicious and filling casserole. You can choose to rest overnight, or simply give it a 15 minute setting time before baking. Creamy eggs, tangy cheese, bread pieces, and meaty chicken sausages make the bulk of this tasty meal. A great way of repurposing day-old bread this breakfast casserole has everything you need in it to serve a protein-rich and delicious meal. Serve with a green salad to make it branch-like or even lunch-like, or with fruit and toasted bread for a hearty early morning meal. Choose any chicken sausage of your liking, or in a pinch use the sausage you have at hand. This casserole is great to feed many with little effort and makes tasty leftovers that you can enjoy up to two days later.

Breakfast casseroles are a great alternative to the classic eggs and bread and make a good canvas to experiment with what you have at home. Following the basic mixture of eggs and milk that this recipe has, you can use brioche, croissants, baguette, or bagel pieces as your bread. Top with sausages, bacon pieces, and add any cheese of your liking. Melty cheeses like cheddar or mozzarella work best but grate any harder cheeses you might have or use cheese slices on top to finish up the casserole. Adding vegetables is also possible. Ingredients

  • 6 large eggs

  • 1 1/2 cups milk

  • 1 teaspoon chicken grill seasoning, Creole seasoning, or seasoned salt

  • 3 slices bread, torn into small pieces

  • 12 ounces chicken sausage. smoked

  • 1 cup grated sharp cheddar cheese

Steps to Make It

  1. Gather the ingredients.

  2. Grease a 2-quart baking dish or spray with nonstick cooking spray.

  3. In a medium bowl whisk together the eggs, milk, and seasoning. Pour on the greased baking dish.

  4. Arrange the bread pieces on top of the egg in the greased baking dish; top with the sliced sausage first and cheese second.

  5. Cover with plastic wrap and refrigerate overnight or let stand for 15 minutes and bake. If you refrigerate overnight, give the casserole about 20 to 30 minutes to come to room temperature before baking.

  6. Preheat the oven to 350 F. Bake, uncovered, for 40 to 50 minutes, until firm and lightly browned around the edges. Serve hot.
