This easy casserole is a great recipe to make ahead the night before your special family breakfast or brunch. You need 15 minutes of preparation and 45 minutes in the oven to serve this delicious and filling casserole. You can choose to rest overnight, or simply give it a 15 minute setting time before baking. Creamy eggs, tangy cheese, bread pieces, and meaty chicken sausages make the bulk of this tasty meal. A great way of repurposing day-old bread this breakfast casserole has everything you need in it to serve a protein-rich and delicious meal. Serve with a green salad to make it branch-like or even lunch-like, or with fruit and toasted bread for a hearty early morning meal. Choose any chicken sausage of your liking, or in a pinch use the sausage you have at hand. This casserole is great to feed many with little effort and makes tasty leftovers that you can enjoy up to two days later.
Breakfast casseroles are a great alternative to the classic eggs and bread and make a good canvas to experiment with what you have at home. Following the basic mixture of eggs and milk that this recipe has, you can use brioche, croissants, baguette, or bagel pieces as your bread. Top with sausages, bacon pieces, and add any cheese of your liking. Melty cheeses like cheddar or mozzarella work best but grate any harder cheeses you might have or use cheese slices on top to finish up the casserole. Adding vegetables is also possible. Cooked onions and peppers mixed with the eggs make a pretty tasty addition, and wilted green leaves or steamed broccoli add a nice color to the casserole. By chilling overnight, you're allowing the flavors to meld and the bread to soak up the eggs, this process will make for a sturdier casserole. If skipping the overnight refrigeration your casserole might be moister and harder to slice, but equally delicious.
