Broccoli Cornbread

Broccoli and cottage cheese make this cornbread super moist, delicious and nutritious.


  • 2 boxes Jiffy corn muffin mix, or similar
  • 4 eggs, beaten
  • 1 1/2 sticks melted butter or margarine (6 ounces)
  • 1 pkg. (10 oz) chopped broccoli, thawed and drained
  • 1 medium onion, chopped
  • 1 cup cottage cheese


Combine all ingredients and pour into greased 9- X 13-inch baking dish. Bake at 375° for 35 to 40 minutes, or until lightly browned.

a big winner, Member floplace

Easy but so good. I too couldn't find my mom's recipe so was happy to find it on this web site. I added about 1/2 cup of parmasan and it was delicious with ribs and corn/black bean salad. A friend took some home to have for breakfast!
