Easy Broccoli Rice Casserole

This broccoli rice casserole recipe was shared on our forum. This would be a nice dish to take along to a potluck.


  • 2 cups minute rice cooked
  • 2 tablespoons butter
  • 1/2 cup diced onion
  • 1/2 cup chopped green peppers
  • 1/2 cup chopped celery
  • 2 cups shredded cheddar cheese, divided
  • 2 pkgs. Frozen broccoli (10 oz. each), cooked and drained
  • 1 can cream of mushroom soup
  • 1 can cream of celery soup


In a skillet over medium heat, melt the butter. Sauté onion, peppers, and celery, stirring, until tender. Combine rice, sauteed vegetables, broccoli, 1 cup Cheddar cheese, and soups. Transfer to a greased casserole dish.

Cover with foil and bake at 350° for 30 minutes, or until the casserole is hot and bubbly. Remove the foil, top with remaining 1 cup or shredded Cheddar cheese, and bake about 5 minutes longer, until top is lightly browned and cheese is melted. Serves 6 to 8.

Really Quick & Easy, Member tafields

This one makes it to my recipe box - I left out the onions, green peppers and celery and it still came out great. My husband loved it so it will be a staple in our household from now on!
