Chocolate Brownies with Chocolate Icing

These chocolate brownies are made with butter and cocoa. Use chopped pecans in this recipe, or use walnuts or no nuts at all.

The icing is a simple cocoa and powdered sugar mixture, perfect for these brownies.

Total Time: 25 minutes

Ingredients:

  • 1 stick (4 ounces) butter
  • 1/4 cup cocoa
  • 3 eggs
  • 1 cup sugar
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1 cup chopped pecans
  • 1 teaspoon vanilla
  • Icing (Below)

Preparation:

Grease and flour an 8 x 8-inch baking pan.

In a small saucepan, melt butter with cocoa. Beat eggs until foamy, then gradually beat in sugar. Add cocoa-butter mixture to egg mixture. Sift flour and baking powder then sift half of it into batter. Mix pecans into the remaining flour; add to cake batter; stir to blend well. Add vanilla. Spread batter into the pan; bake at 350° for 20 to 25 minutes. Ice cooled brownies with icing (below) if desired.

Icing:

  • 2 cups powdered sugar
  • 4 tablespoons cocoa
  • heavy cream or half and half
  • 1 teaspoon vanilla
Sift powdered sugar and cocoa into a mixing bowl. Add vanilla and enough cream to be of desired spreading consistency.
