Butterscotch Brownies with Chocolate and/or Butterscotch Chips

These butterscotch brownies are super simple to make, no electric mixer required.

One reviewer mentioned that the brownies were "gooey" in the center. They are not cake-like, so they will be very moist and chewy as they cool.


  • 5 tablespoons shortening or butter, melted, cooled
  • 3/4 cup light brown sugar, packed
  • 1 teaspoon vanilla
  • 1 egg, lightly beaten
  • 3/4 cup all-purpose flour, about 3 1/2 ounces
  • 14 teaspoon salt
  • 1 teaspoon baking powder
  • 1/2 cup chopped nuts
  • 1 cup chocolate or butterscotch chips, or 1/2 cup each flavor


Combine the melted butter or shortening with the brown sugar, vanilla and egg; stir well. Stir in remaining ingredients. Batter will be thick.

Spread in greased and floured 8-inch square pan. Bake at 350° for 20 to 25 minutes. Don't overbake.

Cut butterscotch brownies while warm.

Brownies missing something!, Member jrkwood

I tried the brownies and cannot figure out what the problem was with them - they were not done in the suggested baking time - so I continued to bake them for an additional 5-10 minutes -- still very gooey in the middle. So, I baked for another 10 minutes and they were just getting harder on the edges and top, so I gave up! They tasted ""ok"" but I will not make these again.
