Butterscotch Brownies with Butterscotch Chips and Coconut

This recipe makes delicious moist, chewy brownies with butterscotch chips, chopped pecans, and coconut, or use chocolate chips.

Cook Time: 30 minutes

Total Time: 30 minutes

Ingredients:

  • 1/2 cup butter, room temperature
  • 2 cups light brown sugar, firmly packed
  • 2 eggs
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 teaspoons vanilla extract
  • 1 cup chopped pecans
  • 1 cup flaked coconut
  • 1 cup (6 ounce package) butterscotch or chocolate chips

Preparation:


Cream butter and sugar together until light and fluffy. Add eggs one at a time, beating after each addition. Combine flour, baking powder and salt; add to creamed mixture; mix until smooth. Stir in vanilla, chopped pecans, coconut, and butterscotch chips (or chocolate chips). The batter will be thick.

With a spatula, spread the batter in a greased and floured 13x9x2-inch baking pan. If the batter looks like it's spread a little thin in places, it will spread and fill in as they bake. 

 Bake at 350° for 20 to 25 minutes, or until browned and set. Do not overbake.

Cut into bars while warm. Makes about 24 butterscotch brownies, (2-inch squares).

A Disaster, Member Eburstein

I followed this recipe exactly and got a disaster that I had to throw out. Completely dry and hard. I knew something was wrong when I spread the batter in the pan because it was too thick but I went ahead and baked it anyway. Something is wrong in the recipe. Maybe it should have more eggs, or less sugar, or more butter.
