Cook Time: 25 minutes
Ingredients:
- 1/3 cup butter
- 2/3 cup light brown sugar, firmly packed
- 1 egg
- 1 cup sifted all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon baking soda
- 1/3 cup milk
- 1/2 teaspoon vanilla
- 1 cup rolled oats
- 1/2 cup chopped macadamia nuts, pecans, walnuts, or other nuts
- 1/2 cup flaked coconut
- Orange Glaze, below
Preparation:
Cream butter and brown sugar; add egg and beat well. Combine flour, salt and soda; add to first mixture alternately with milk and vanilla, beating after each addition. Stir in oats, nuts, and coconut.Bake at 350° in a greased 13x9x2-inch baking pan for about 20 to 25 minutes, or until browned lightly. While baking, prepare glaze.
Orange Glaze
- 1/3 cup sugar
- 3 tablespoons orange juice
- 1 tablespoon grated orange peel
