Toffee Bars with Coconut

These toffee bars are made with butter and brown sugar, along with chopped nuts and coconut.

Cook Time: 35 minutes

Ingredients:

  • 1/2 cup butter
  • 1/2 cup light brown sugar, packed
  • 1 cup all-purpose flour
  • .
  • Topping:
  • 2 eggs
  • 1 cup light brown sugar, packed
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon salt
  • 1 teaspoon baking powder
  • 2 tablespoons flour
  • 1 cup flaked coconut
  • 1 cup chopped pecans or walnuts

Preparation:

Cream butter with 1/2 cup brown sugar; add flour to mixture. Pat into a 13x9x2-inch baking pan. Bake at 350° for 10 minutes. Remove from oven and set aside and let cool.

For topping, beat eggs until light. Add 1 cup brown sugar and the vanilla. Combine salt, baking powder, flour; add to egg mixture. Blend in the coconut and chopped pecans. Spread evenly over slightly cooled bottom layer. Bake at 350° for 25 minutes.
