Chocolate Squares with Shortbread Crust


Chocolate squares are made with a buttery shortbread  cookie crust and custard-like chocolate topping.


  • 1 cup all-purpose flour
  • 1/3 cup butter, room temperature (5 tablespoons plus 1 teaspoon)
  • 1/4 cup powdered sugar
  • 2 eggs
  • 1 ounce unsweetened chocolate, melted, cooled
  • 1 cup granulated sugar
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla


Combine flour, butter, and powdered sugar. Press into an 8 or 9-inch square baking pan. Bake at 350° for 20 minutes.

Beat remaining ingredients together until light and fluffy, about 3 minutes. Pour mixture over hot crust and bake for 20 to 25 minutes longer, or until set. No imprint will remain when touched lightly in center. Cool and cut into squares.
Makes about 16, depending on size.
