Peanut Butter-Oatmeal Bars

Delicious bars with peanut butter and chocolate chips.

Cook Time: 20 minutes

Ingredients:

  • 14 oz. sweetened condensed milk
  • 1/2 c. peanut butter
  • 1 c. flour
  • 1/2 tsp. salt
  • 2 c. quick cooking rolled oats
  • 1 c. brown sugar
  • 1/2 tsp. soda
  • 3/4 c. butter, softened
  • 1 cup chocolate chips

Preparation:

Combine sweetened condensed milk and peanut butter; stir to blend then set aside. Combine brown sugar, flour, oatmeal, soda, salt and butter. Mix well.
Pat 1/2 of mixture in lightly greased 9 x 13 baking dish.
Drizzle with peanut butter mixture. Sprinkle with chocolate chips. Top with remaining crumbs. Bake about 20 minutes at 350°. Watch carefully and take care not to overbake.

"This bar cookie was perfect and oh so easy to make. The peanutbutter condensed milk gave such a rich texture and subtle peanutbuttery fudge flavor as the sandwich filling, keeping the buttery-oat cookie crust together. Sorry for the run-on sentence. This really was a great cookie. If you are not a peanutbutter fan you could probably just omit the peanut butter all together and just add extra condensed milk and a touch of vanilla for a real caramel flavor. Thank youf or sharing this wonderful recipe."
