Oat Date Cake Made With a Cake Mix

Oat Date Cake

This delicious date cake starts with a cake mix, with the addition of oats, molasses, and dates.

Ingredients:

  • 1 cup quick oats
  • 1 1/4 cups boiling water
  • 1/4 cup molasses
  • 8 ounces chopped pitted dates
  • 6 tablespoons butter
  • 1 box (18.25 ounces) butter pecan cake mix
  • 4 large eggs
  • 1/2 cup chopped pecans

Preparation:

Grease and flour a 10 to 12 bundt cake pan thoroughly or spray with a cooking spray with flour. Heat oven to 350°. If using a dark colored cake pan, heat to 325°.

Pour oats in a bowl then pour boiling water over them. Stir in molasses and chopped dates; set aside to cool to room temperature. In a large mixing bowl with electric mixer, beat together the softened butter, cake mix, and eggs until smooth. Beat in the oat and date mixture and fold in pecans. Spoon into the prepared cake pan and bake for 45 to 55 minutes, or until a toothpick inserted in center comes out clean. Cool in pan on a rack for 10 minutes. Invert onto a serving plate to cool completely. Ice or dust with powdered sugar.
