Jen's Bright Eyed Cookies

These bright eyed cookies are preserve filled thumbprint cookies.

Cook Time: 10 minutes

Ingredients:

  • 1 cup butter
  • 1/2 cup sugar
  • 2 tablespoons water
  • 1 egg, separated
  • 1 teaspoon vanilla
  • 2 cups flour
  • 1/2 teaspoon baking powder
  • 1 cup finely chopped nuts
  • jam or jelly

Preparation:

Cream butter and sugar, add water, egg yolk and vanilla; blend well. Sift together flour and baking powder; add to creamed mixture, blending well. Shape into small balls. Roll balls in lightly beaten egg white, then roll in finely chopped nuts. Place on greased baking sheet.
Bake five minutes at 350°. Make a thumb print and return to oven; bake 8-10 minutes longer. Remove from oven and spoon a little jam or jelly into the thumbprint.

"My grandmother made delicious little thumbprint cookies like these for christmas every year. When she passed away her recipe was lost with her so my mother and I looked and looked to find one just like it. When we made these, they tasted just like my grandmother. Simple, sweet and wonderful. We like them with walnuts and marion berry jam in my house and it would not be christmas without them. Thank you to whoever posted this for giving us back something that we thought we had lost."
