Brandy Wafer Cookies

These brandy wafer cookies are made with butter, molasses, and spices.

Cook Time: 12 minutes

Ingredients:

  • 1/2 cup molasses
  • 1/2 cup butter
  • 1 1/4 cups sifted flour
  • 1/4 teaspoon salt
  • 2/3 cup sugar
  • 1 tablespoon ginger
  • 3 tablespoons brandy

Preparation:

In a saucepan, heat molasses to boiling; add butter. Add sifted dry ingredients slowly, stirring constantly; add brandy. Drop by half-teaspoonfuls 3 inches apart onto greased baking sheets. Bake at 300° for about 12 minutes. Cool in pan 1 minute; remove from pan with spatula and immediately roll around handle of wooden spoon. Do not bake more than 8 at one time. If removed from pan too soon, cookies will break; if too cool, they will not roll. Keep the brandy cookies in an airtight container.
Makes about 4 to 5 dozen brandy wafer cookies.
