Butterscotch Pecan Cookies

These refrigerator cookies are made with brown sugar, butter, and pecans. A tasty old-fashioned refrigerator cookie recipe.

Cook Time: 10 minutes

Total Time: 10 minutes


  • 1/2 cup butter
  • 1 cup brown sugar
  • 1 teaspoon vanilla
  • 1 egg, beaten
  • 1 1/2 cups sifted all-purpose flour
  • 1 1/2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1/2 cup finely chopped pecans


With electric mixer at high speed, cream butter, sugar, and vanilla until light. Stir in beaten egg; blend well.

Sift together the flour, baking powder, and salt; stir into creamed mixture. Stir in nuts. Shape into a roll about 2 inches in diameter; wrap in waxed paper and refrigerate until thoroughly chilled. Cut roll into slices about 1/8-inch thick and place on ungreased baking sheet. Bake at 350° for about 8 to 10 minutes. Makes about 6 dozen cookies.

We made the dough yesterday and baked them today and we love them! The dough seemed too wet when preparing it for chilling, but it hardened up nicely and was easy to cut and bake today. I cheated and used KCJ butterscotch flavoring instead of vanilla, and they came out soooo good we're having a hard time not eating too many as they cool. Ours baked in about 6 minutes, so either I cut them too thin, or it's the elevation here (4500') or the recipe just needs adjusting. I have 2 oven thermometers in a $4000 oven, and my oven temp was right on, so it wasn't because my oven is running too hot. These are wonderful and delicious and easy...what more can you ask for...except maybe a maid to bake them...but I had my husband cleaning up the mess, so who needs a maid!?!
