Cornmeal Butter Cookies

These tasty butter cookies are made with a mixture of flour and cornmeal, along with raisins, and other ingredients. Feel free to use dried cranberries or dried blueberries in place of the raisins in these cookies.

Ingredients:

  • 1/2 cup butter
  • 2/3 cup sugar
  • 1 egg slightly beaten
  • 1 teaspoon lemon extract
  • 1/2 cup yellow cornmeal
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup raisins

Preparation:

In a mixing bowl, beat butter and sugar together until creamy. Blend in the egg and lemon extract. In a separate bowl, combine the cornmeal, flour, baking powder, and salt. Add the flour mixture to the butter mixture. Mix well. Stir in the raisins. Drop batter by teaspoons onto a lightly greased baking sheet. Bake at 375° for 12 to 14 minutes or until bottom of cookies are lightly browned. Remove from oven. Let cookies cool for 1 minute; remove from baking sheet.

Corn Bread is NOT cake! No, I say. Corn Meal Cookies? This is GOOD! This is the way God intended these ingredients to be put together. When prepared as this recipe states, they are a delicious corny mealy delight! Variations: Try Meyer Lemon Zest in place of Lemon Extract and a thumbprint full of cranberries. Mmmmmm, mmm. This is good.
