Lemon Spritz Cookies

Ingredients:

  • 1 1/2 sticks butter or margarine, softened (12 tablespoons or 6 ounces)
  • 1 tbsp lemon juice, at room temperature
  • 1 tsp lemon peel, finely grated
  • 2 1/4 cups all-purpose flour
  • 1 cup powdered sugar, sifted
  • 1/4 tsp salt

Preparation:

Preheat oven at 350°. In a mixing bowl, combine butter or margarine, lemon juice, and lemon peel. In another mixing bowl, combine flour, sugar, and salt. Mix wet ingredients with dry ingredients just until moistened. Spoon dough into a cookie press with desired template in place. Press cookies about 2" apart onto lightly greased or sprayed baking sheets. Bake 10 to 12 minutes, or lightly browned.
Makes about 3 dozen.

"overall, this recipe was disappointing. There was not enough liquid in it. When I tried mixing it up, it was like powder. I didn't have lemon zest, so in order to up the liquid in the recipe, I added more lemon juice and some lemon extract. All in all, I probably added between 1/8 to 1/4 cup additional liquid. I didn't measure it as I went, so I'm not sure how much exactly. With all the additions, the cookies did taste great. Crunchy and quite lemony. Also, I'm not sure greasing the pans was necessary. I did grease the 1st two pans, and the cookies did not want to stick to them. The third pan I didn't grease, and they stuck much better. I didn't have a problem getting them off the pan either. There is probably enough butter in the recipe to make greasing the pans unnecessary. Either I will keep looking for a lemon spritz recipe that is better, or I will keep this one and tweak it again."
