Tangy Red Cabbage

Red cabbage and apples are cooked with vinaigrette, seasonings, and nutmeg.

Total Time: 35 minutes

Ingredients:

  • 1 head red cabbage, about 2 pounds
  • 1/2 cup red wine vinaigrette
  • 1/3 cup water
  • 2 apples, peeled, cored, and thinly sliced
  • 1 teaspoon salt
  • 1/8 teaspoon pepper
  • 1/8 teaspoon freshly grated nutmeg

Preparation:

Quarter cabbage; core and wash. Drain. Shred cabbage finely then place in a large saucepan. Add vinaigrette, water, and apples. Cover and simmer 35 minutes, or until cabbage is tender. Stir occasionally during cooking. Season with the salt, pepper, and nutmeg.
