Ingredients:
- 2 envelopes or teaspoons instant beef broth granules
- 3 cups boiling water
- 4 ounces shredded vegetables for coleslaw
- 2 tablespoons dried celery flakes
- 1 tablespoon dried parsley flakes
- 1/2 cup chopped onion
- 1 can (14.5 ounces) diced tomatoes
- 1 bay leaf
- 1 teaspoon leaf oregano, crumbled
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
Preparation:
Dissolve instant beef broth in boiling water. Add coleslaw vegetables, celery flakes, onion, tomatoes, bay leaf, oregano, salt and pepper. Cover and simmer until vegetables are tender, about 15 minutes.Makes 6 servings of fat free minestrone soup.
