Ingredients:
- 1 package (approx. 18.75 ounces) chocolate fudge cake mix
- 1/3 cup vegetable oil
- 2 large eggs, divided
- 8 ounces cream cheese, room temperature
- 2/3 cup peanut butter
- 2 teaspoons vanilla extract
- 1/3 cup granulated sugar
Preparation:
Grease and flour a 13x9-inch baking pan or spray with baking spray. Heat oven to 350°. In a mixing bowl, beat the cake mix with 1 egg and the vegetable oil until well blended. The mixture will be crumbly. Reserve 1 cup of the crumbly mixture and pat the remaining crumbs firmly into the bottom of the prepared baking pan to form the crust. Bake for 15 minutes. Remove from oven.In another bowl, beat the cream cheese with peanut butter until smooth. Beat in the remaining egg, vanilla, and sugar just until blended. Spread the peanut butter mixture over the hot crust. Sprinkle remaining crumbs evenly over the peanut butter-cream cheese layer.
Bake for 25 to 30 minutes, until set. Cool and cut into squares to serve.
