Easy Butter Mints

Ingredients:

  • 1/2 cup butter, at room temperature
  • 3 3/4 cups powdered sugar
  • 1 tablespoon whipping cream
  • 1/8 teaspoon peppermint extract
  • red food coloring

Preparation:

In a mixing bowl, cream butter well; blend in powdered sugar gradually, mixing until smooth. Add whipping cream, peppermint extract, and food coloring; blend well. Spoon batter into a cake decorator tube and using a shaped tip, press shapes onto waxed paper. Let mints set up for 30 minutes. Store in an airtight container in a cool place.
Makes 3 to 4 dozen mints.
