Easy Cream Cheese Mints

Easy cream cheese mints, made with creamy frosting mix and cream cheese.

Ingredients:

  • 1 pkg. (8 oz.) cream cheese
  • 2 tablespoons half and half
  • 1/4 cup soft butter
  • 1 pkg. (15 ounces) white creamy frosting mix
  • 1 teaspoon peppermint extract
  • Food coloring, as desired

Preparation:

Combine cream cheese, half and half and butter in a heavy saucepan. Stir over low heat until cheese mixture is smooth and creamy and butter is melted. Stir in frosting, blending well. Add peppermint extract and food coloring. Divide into smaller portions to make several pastel colors. Roll into balls or drop by teaspoon onto waxed paper. Press with a fork or stamp with a design. Let stand, uncovered, at room temperature until firm and outside is dry. The inside should still be rather soft and creamy.
Makes about 7 to 8 dozen.
