Peanut brittle is so good that it seems as if it would be time intensive and complicated, but it's a quick and easy candy to make.
This can be made with any nuts, and we often make it with pecans as they are a Cajun and Creole favorite. Either way, you'll have happy people sitting around the table, munching on this delicious treat.
Yield: About 1 Pound
Ingredients:
- 2 tablespoons softened butter, divided
- 1 1/2 cups sugar
- 1/2 cup light corn syrup
- 1/8 teaspoon salt
- 1 1/2 cups peanuts
- 1 teaspoon baking soda
Preparation:
Place a large piece of foil on a baking sheet and butter it with 1 tablespoon of the softened butter.
Combine the sugar, corn syrup and salt in a large heavy saucepan, and bring to a boil over medium heat (takes about 5 minutes). Add peanuts and stir until sugar is dissolved. Reduce heat to medium-low. Cook over medium-low heat for about 30 minutes, or until a candy thermometer registers 300ºF, or until a small spoonful of the candy dropped into very cold water breaks into hard, brittle threads. (The use of a candy thermometer is highly recommended.)
Remove from heat and immediately add the remaining tablespoon softened butter and baking soda. Quickly stir to combine and pour onto buttered foil in baking pan.
When peanut brittle has cooled, break into pieces. When completely cooled store, covered, in an airtight container.
