Iced Carrot Cookies

Carrot cookies are made with an orange icing and topped with coconut.

Cook Time: 12 minutes

Ingredients:

  • 1 cup granulated sugar
  • 1/2 cup shortening
  • 1/4 cup butter
  • 1 cup mashed cooked carrots
  • 1 egg, lightly beaten
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla
  • Orange Icing, below

Preparation:

Cream sugar, butter, and shortening. Stir in mashed carrots and lightly beaten egg. Add flour, baking powder, salt, and vanilla. Blend well. Drop by teaspoonfuls onto greased baking sheets and bake at 375° for 10 to 12 minutes, or until lightly browned. Make icing and ice cookies while still warm. Makes about 3 dozen cookies. Orange Icing
  • Juice and finely grated peel of 1/2 orange
  • confectioners' sugar
  • coconut
To juice and rind in a small mixing bowl, add enough confectioners' sugar to make a spreadable icing. Spread on the still-warm carrot cookies. Sprinkle with coconut.
