- 3/4 cup vegetable oil
- 2 eggs
- 1 1/2 teaspoons baking powder
- 1 1/2 teaspoons ground cinnamon
- 1 teaspoon salt
- 2 teaspoons vanilla extract
- 1 cup finely grated carrots
- 3/4 cup finely chopped pecans
- whipped cream or whipped topping for garnish, or frost with cream cheese frosting
