- 6 carrots, pared and cut into 1/2-inch slices
- 2 teaspoons fresh lemon juice
- 3/4 teaspoon salt
- 1/2 teaspoon ground ginger
- 1/8 teaspoon pepper
- 2 tablespoons butter
- fresh mint or other herbs, for garnish, optional
Place carrots in a buttered 1-quart casserole. Mix lemon juice with salt, ginger, and pepper; pour over carrots then dot with butter. Cover and bake at 400° F (200° C/Gas Mark 6) for 1 hour, or until carrots are tender.
Toss with chopped mint, cilantro, or parsley, if desired.
