Baked Ginger Carrots with Lemon

Ground ginger is added to these sliced carrots, along with butter and fresh lemon juice. The carrots are baked in a covered casserole.


  • 6 carrots, pared and cut into 1/2-inch slices
  • 2 teaspoons fresh lemon juice
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/8 teaspoon pepper
  • 2 tablespoons butter
  • fresh mint or other herbs, for garnish, optional


Place carrots in a buttered 1-quart casserole. Mix lemon juice with salt, ginger, and pepper; pour over carrots then dot with butter. Cover and bake at 400° F (200° C/Gas Mark 6) for 1 hour, or until carrots are tender.

Toss with chopped mint, cilantro, or parsley, if desired.

Serves 4.
