Ginger Carrots

Gingered carrots are baked with butter, lemon juice and ginger.

Ingredients:

  • 6 carrots, pared and cut into 1/2-inch slices
  • 2 teaspoons fresh lemon juice
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground ginger
  • 1/8 teaspoon pepper
  • 2 tablespoons butter

Preparation:

Place carrots in a buttered 1-quart casserole. Mix lemon juice with salt, ginger, and pepper; pour over carrots then dot with butter. Cover and bake at 400° for 1 hour, or until carrots are tender.
Serves 4.
