Lemony Baked Catfish

Use catfish, tilapia, orange roughy, or your own favorite white fish in this light recipe.

Ingredients:

  • 1/4 cup fresh lemon juice (about 1 1/2 to 2 lemons)
  • 1 tablespoon vegetable oil
  • 3 tablespoons natural applesauce
  • 1 egg white, lightly beaten
  • 1 pound catfish fillets, or use tilapia, roughy, or other firm, mild white fish
  • 1 cup fine dry bread crumbs, seasoned

Preparation:

Mix first four ingredients together well and add fish fillets. Marinate in the refrigerator for an hour. Take catfish fillets out; dip in bread crumbs (pre-seasoned or add your own seasonings), then refrigerate for another 30 minutes. Bake in a preheated 400° oven for about 20 minutes or until fish flakes with a fork.
Serves 4.

"After failing miserably at grilling catfish 3 times, I decided to try baking and found this recipe. It is easy (my first requirement!), quick (my second requirement), and it came out fabulously! The fish was light and flaky, and the lemon flavor with the seasoned breadcrumbs was perfect. I used Italian Style breadcrumbs, which worked well with the lemon (I was worried about that). We will definitely use this recipe again. Thank you!!"
