Ingredients:
- 4 catfish fillets
- 1/2 cup margarine
- 1/3 cup lemon juice
- 2 tsps salt
- 1 tsp pepper
- 1/2 cup diced carrots
- 1/4 cup diced celery
- 1/4 cup chopped green onions
- 2 TBS snipped fresh parsley (I also use dried)
- 2 lemons thinly sliced
