Tangy Cauliflower

Cauliflower with chopped bell peppers and tangy dressing ingredients.

Ingredients:

  • 1 medium cauliflower, broken into flowerets
  • 3 tablespoons red wine vinegar
  • 2 tablespoons melted butter
  • 2 tablespoons chopped red bell pepper (or use roasted red pepper)
  • 2 tablespoons chopped green bell pepper
  • 1 teaspoon sugar
  • 1/4 teaspoon salt

Preparation:

Steam cauliflower or cook in a small amount of boiling salted water for about 8 to 10 minutes, until crisp-tender. Drain cauliflower. In a small saucepan, combine vinegar, melted butter, red and green peppers, sugar, and salt. Cook over low heat for 5 to 7 minutes; pour over hot cauliflower. Cauliflower recipe serves 4 to 6.

"I tried this because I was tired of the same old caulflower recipes--cream sauces and cheese. This really was delicious and my son really liked it. It's almost like a sweet and sour, but more sour than sweet. And, it's very attractive with the colored pepper. Definitely a keeper!"
