Ingredients:
- 2 1/2 cups vanilla wafer crumbs
- 1/2 cup melted butter
- 1/2 cup granulated sugar
- 1 envelope unflavored gelatin
- 1 cup milk
- 1 package (8 ounces) cream cheese, softened
- 1/2 cup sugar
- 1 1/2 teaspoons vanilla extract
- 1 can (14 ounces) evaporated milk, chilled until ice-cold
- 1/4 cup unsweetened cocoa
Preparation:
Combine crumbs and melted butter; press into bottom and up sides of a 9-inch springform pan. Chill.In a small saucepan, combine 1/2 cup sugar with gelatin; stir in milk. Heat and stir until sugar and gelatin dissolve. Remove from heat and cool until mixture begins to thicken.
Beat together cream cheese, 1/2 cup sugar, and vanilla. Blend in gelatin mixture. In a separate bowl, beat ice-cold evaporated milk until stiff peaks form; fold into the cream cheese mixture. Place 1/3 of the mixture into another bowl; sift cocoa over small portion then stir in until blended.
Alternately spoon plain and chocolate mixtures into the crust, then swirl with a spatula. Chill for at least 8 hours.
